Easy Chicken Sopas Recipe

Why do we call it #chickensopas ? The dish is the Filipino version of the American chicken noodle soup, introduced during the American colonial period of the Philippines. The name simply means "soup" in Tagalog, from Spanish sopa ("soup").

I grew up in the Philippines and this was comfort food for me. It is a dish that can be made as a huge batch so all you need to do is reheat it.

Since we are lazy (hence the tamad cook), here's a hack on how to make this dish using the following items and ingredients.

  • Prep Time: 10 mins

  • Cook Time: 30 mins

  • Total Time: 40 minutes

  • Yield: 8 servings (1 cup)

Items Needed:

4 QT Dutch Oven - I am using this cute one from Golden Rabbit .

Ingredients Below:

  • 8 oz. (preferably organic/hormone free) chicken thighs

  • 2 stalks celery chopped

  • 1 piece small onion diced

  • 3 pieces chicken sausage sliced

  • ¾ cups carrots diced

  • 8 oz. organic milk

  • 1 cup elbow macaroni

  • 2 teaspoons minced garlic

  • 2 packets of Chicken broth (Trader Joe's)

  • 1 box/32 oz of Bone broth (organic chicken)

  • 2 tablespoons cooking oil (I'm using Avocado Oil)

  • Salt and ground black pepper to taste

NOTE: Adjust the recipe according to how many serving you wish to make


  1. Boil 3 cups water in a medium pot. Add the chicken thighs.

  2. Cover and cook in medium heat for 15 to 18 minutes. You may add more water if needed.

  3. Separate the chicken from the water. Let the chicken cool down and then shred. Set both shredded chicken and water aside.

  4. Heat oil in the soup pot. Sauté the garlic until it turns medium brown. Add onion.

  5. Add the shredded chicken and sausage. Stir and cook for 1 minute.

  6. Set aside the protein then add celery, and carrot. Continue to sauté for 2 to 3 minutes.

  7. Quickly stir and then pour the water used to boil the chicken. Let boil.

  8. Add the Chicken broth packets. Stir. Cover and cook for 3 to 5 minutes.

  9. Put the elbow macaroni in the pot. Cook for 10 minutes.

Note: you can add more water if needed.

  1. Pour the milk. Stir, let boil, cover and cook for another 3 minutes.

  2. Add salt and ground black pepper to taste.

  3. Transfer to a serving bowl. Serve.

  4. Share and enjoy!
